The Dux is proud of its strong relationships with local suppliers, growers and artisan producers, many forged over more than 30 years of Dux de Lux history. seafood is of the highest quality and is caught locally in the cold waters off the coast of the South Island with an ever changing variety of species delivered fresh daily to the kitchen door. Favourite staples are groper, gurnard, terikihi, complemented with seasonally available species such as scallops, oysters and whitebait. The vegetarian dishes reflect the very best of what is seasonally available, complemented by seasonal herbs grown in our very own organic garden.
